Like many before her, the chef Amanda Cohen was a teenager when she stumbled across cookbooks from Moosewood, the ground-breaking vegetarian restaurant in Ithaca, New York. Unlike anyone else, however, she went on to open an acclaimed, Michelin-starred vegetable-centric restaurant in New York. It’s not for nothing that the picture with her biography on the Dirt Candy website displays a waterfall, a rainbow and a unicorn. You gotta believe in your dreams.
